Secrets of making new wine 2018

As the name suggests, the Gamay Nouveau is made from a single grape: the Gamay. A very aromatic grape that expresses very fruity and spicy aromas.

The grapes are harvested early (early September), at full maturity. Rigorous sorting is carried out in order to eliminate vegetable particles, and grains judged to be of insufficient quality. The vatting time is short (5 to 7 days) at 25° C to extract the color and aromas of the fruit without bringing too much tannin.

What is the difference between the new gamay and the primeur?

The new wine and the early wine are often confused, however, it is about 2 different wines each answering a precise specifications

New wine

  • Mechanical harvest

  • Thermovinification

  • Alcoholic fermentation (transformation of sugar into alcohol)

  • Yield limited to 100 hectoliters per hectare

It can be emphasized that the production of new wine is a real oenological feat since the vinification process is very short: the grapes are harvested at the beginning of September and the wine bottled at the beginning of October!

The primeur wine

  • PDO (Protected Appellation of Origin)

  • Manual harvest

  • Vinification by carbonic maceration

  • Alcoholic and malolactic fermentation (transformation of malic acid into lactic acid)

  • Yield limited to 58 hectoliters per hectare

  • National release on the 3rd Thursday of November
