AOP Cahors

Siderolite plateau (50 million years old). Terroir of plateau constituted on a limestone base, covered by pockets of mixed red clays and sands with ferrous concretions as dolina. These two elements associated enabled
determination of this seventh terroir.

Men...

A history

Manually harvested grapes are placed in 50 kilo crates which are taken immediately to the winery and emptied onto a conveyor belt equipped with a destemmer (latest model). This allows conservation of the entire grape. Harvest is placed in a temperature controlled stainless steel tank. Alcoholic fermentation for a week or more. Ageing in 400 litre barrels with malolactic fermentation. This kind of barrel promotes subtle and complex aromas and at the same time respects the fruit without too many woody notes.

dress, nose, mouth

Deep red robe, purple. Nose of mineral, eucalyptus and mint. Remarkably full-bodied in the mouth with buttery and ripe red fruit notes. Very fine final of hazelnut.
